
Part of the limited Jundo Ichizu series from Toyobijin, this junmai ginjo is made from Senbon Nishiki, a Hiroshima-developed rice descended from Yamada Nishiki. Senbon Nishiki is known for elegant richness and top-tier fruitiness; early opens show a crisp, taut acidity that rounds out into a mellow, fruity profile over subsequent days.
