This Sugata junmai ginjo from Ibaraki Shuzo uses Yamada Nishiki, widely regarded as Japan's preeminent sake rice variety for ginjo production, and captures only the nakadori center-cut fraction for its superior balance. Presented as a muroka unfiltered, raw, undiluted namagenshu, the sake retains the full concentration and aromatic freshness of the pressing. Yamada Nishiki's characteristic clean sweetness and refined structure are expressed at their most immediate in this uncompromised format.
