Jousenwakamidori Tarudume from Iiyama Shuzo in Nagano is the cask-stored version of the josen Wakamidori line, aged in cedar barrels to develop the distinctive resinous and woody aromas associated with traditional taru sake. Cedar aging historically served practical storage purposes but evolved into an appreciated flavor style, with the terpene compounds in sugi wood contributing camphor-like and forest-fresh notes to the sake. Northern Nagano's soft mountain water provides the clean, smooth base that carries the cedar character without harshness.
