A koshu tokubetsu honjozo from Touhoku Meijo in Sakata, Yamagata, aged beyond the standard release window to develop additional depth and mellowness. The brewery's kimoto foundation and cellaring time give this sake a concentrated, rounded character with a firm umami core.
