Bottled as a namagenshu nigori, this unfiltered, unpasteurized, undiluted junmai from Umetsu Shuzo is a rice-forward cloudy sake with concentrated umami and no added sweetness. The Tottori brewery, founded in 1865, uses only rice and rice koji, with Daisen mountain spring water.
