
Taito Junmai Ginjo is produced by Chiyonosono in Kumamoto as part of a sake-culture initiative, using locally grown Yamada Nishiki and Kumamoto-origin yeast in a low-temperature prolonged fermentation. The careful temperature management builds a delicate, elegant ginjо aroma with a clean, food-compatible finish.
