Sake Komachi, a rice variety developed specifically in Akita, is used here at an undisclosed polish level in this junmai daiginjo from Okuda Shuzoten. The brewery draws on its proprietary MS3 house yeast and Ou mountain range water to express the variety's characteristic clean sweetness and fragrant aroma.
