Asaizumi Josen ('superior selection') from Asashuzo in Hiroshima Prefecture is brewed with the same soft Asa region water that gives Hiroshima sake its characteristic smooth mouthfeel and gentle flavor. Hiroshima became renowned as a center for soft-water brewing after Senzaburo Miura's 19th-century innovations demonstrated the distinctly smooth sake achievable with regional soft water.
