Uzen Shiraume is brewed by Haneda Shuzo in Tsuruoka City's Oyama district, Yamagata Prefecture, a brewery with origins dating to 1592 and the oldest among the four breweries of the historic Oyama sake town. The brewery uses slightly harder water than its Oyama neighbors, which produces a firmer, drier sake with good backbone for warming, and its absolute refusal to use activated carbon filtration results in a sharp, pure umami despite no color correction.
