Tokyo Junmai

Tokyo Junmai is produced by Tokyo Minato Jozo, the only sake brewery operating within the 23 wards of Tokyo, reopened in 2011 in the Shiba area of Minato ward. The brewery's flagship Edo Kaijo line is crafted using Tokyo rice, water, yeast, and land, making it one of the most locally rooted sake expressions in the country. Bottles from this brewery can be found in Michelin-starred restaurants and leading Tokyo hotels.
