Taenohana

Moriki Shuzojou is based in Iga, Mie Prefecture, the storied land of the ninja, where fourth-generation brewmaster Rumiko Moriki became Japan's first female toji-kuramoto combination in 1998. The brewery has produced exclusively junmai sake since 1999, applying the labor-intensive futa-koji method — normally reserved for premium grades — to every product in the range, and working with organically grown rice cultivated on the brewery's own fields. Tae no Hana encompasses kimoto and yamahai expressions that emphasize ambient yeast fermentation, producing sake with layered acidity and depth that has inspired a manga series based on Rumiko's life.
