Shodoshima Shuzo, whose flagship brand is Morikuni, moved to Shodoshima Island in Kagawa Prefecture to access the island's pristine water and revive a local sake tradition that had been absent for decades. Founded in its current form in 2018, the brewery operates under the motto fun sake brewing, with a young staff composed largely of female immigrants to the island working under the guidance of a seasonal toji from Tajima. Its sake is brewed using Ooseto sake rice from Kagawa and Sanuki Olive Yeast, a strain developed from the island's own olive orchards.
