Okinazuru is the flagship brand of Oishi Sake Brewery, founded during the Genroku Era (1688-1704) in Kameoka, Kyoto Prefecture, where the master brewer belongs to the Tamba guild, considered one of Japan's three great brewing guilds. The brewery has relied on handmade production without machines for over 300 years, centering its process on the kimoto technique, a natural Edo-era method that cultivates yeast through the skillful management of microorganisms.
