Founded in 1860 in Ryuo Town, Shiga Prefecture, Matsuse Sake Brewery has built the Matsunotsukasa brand around a philosophy of gratitude for the land and sake that can only be made in one place. Committed to traceable origins since 1988, the brewery switched entirely to contract-cultivated rice by 1992, a practice it has maintained ever since. Beyond its traditional roots, the brewery explores wine-influenced brewing methods and aging techniques, expanding what is possible for Japanese sake.
