Echigo Shuzojo, based in Niigata City, draws on the craft of the Nozumi toji lineage — one of the three great schools of Echigo master brewers — to produce Koshino Happo using cold-weather hand-brewing methods and the region's pure snowmelt water. The brand name combines the history of the Hatta family brewery with the old Toyosaka place name, and carries the wish that the brewery and its customers may prosper together as endlessly as the kanji for eight. Roughly ninety percent of production is designated-grade sake, with junmai expressions making up the majority of the lineup.
