Kaito Otokoyama is brewed by Kaitouotokoyama Shuzo, founded in 1716 in Minamiaizu, Fukushima Prefecture, where 14 generations of the family have leveraged the region's severe winters to craft sake over more than 300 years. The brewery produces several brands including Kuboi and Sannoumaru alongside the flagship Kaito Otokoyama, most of which circulate primarily within Fukushima Prefecture. The cold mountain climate of Minamiaizu continues to shape the brewery's deliberate, tradition-rooted approach to fermentation.
