Fukutokucho is produced at the Nirasaki plant of Fukutokucho Shurui in Yamanashi Prefecture, a brand whose roots trace to the Kansei era of Edo-period Nada in Osaka. The name, drawn from a Chinese classical text meaning where virtue and fortune are full, long life is boundless, is upheld through the brewery's proprietary Shunrei-zukuri flash-heating and rapid-cooling process, which draws out rice umami while using pristine naturally filtered water from the Chino Mountains.
