Ohtsuka Shuzo is the sole sake brewery in Komoro City, Nagano Prefecture, operating at the foot of Mount Asama in one of Japan's most extreme cold climates. The brewery draws on locally grown Shinshu sake rice and the distinctive cold-climate water of the region to produce handcrafted sake in small batches. Asamadake, named for the nearby volcano, is characterized by rich flavor alongside a crisp, clean finish.
