Description
Yamada Nishiki polished to 65% is fermented using a yamahai starter, then bottled as a muroka namazake genshu without filtration or pasteurization. The yamahai method produces a naturally acidic moto that gives this tokubetsu junmai its pronounced depth and backbone.
