Aged for three years using the traditional yamahai method and made with Yamadanishiki rice, this Miyoshikiku expression from Tokushima gains remarkable depth from extended maturation. The extended aging mellows the yamahai's natural acidity while amplifying earthy, umami-rich complexity and a long, warming finish.
