Made from Bizen Omachi, one of Japan's oldest sake rice varieties, polished to 50% and brewed in the Suigei tradition of gentle, food-pairing acidity. Omachi contributes an individual, full-bodied character, and the brewery's aim of a soft acidity junmai daiginjo gives the sake a distinctive, layered quality. Available as a special-retailer-limited release.
