Nishinoseki Daiginjo Hizokoshu is a daiginjo aged in the cellar using Yamada Nishiki polished to 35%, developing greater depth and complexity over time. This Oita brewery pioneered the commercial sale of genshu in 1963 and applies the same dedication to aged expressions in this limited-availability hizoshu.
Highly aromatic and elegant, with added alcohol to enhance floral notes.
