Koshi Tanrei rice, milled to 45%, goes into this junmai daiginjo from the Nagaoka brewery. Koshi Tanrei was developed specifically for Niigata brewing, combining the lightness of Gohyakumangoku with the umami depth of Yamada Nishiki, and here it produces a refined, umami-forward daiginjo with a calm ginjo aroma.
