春季压榨的新酒经火入后,在炎热的夏季于凉爽的酒藏中静置保存。进入秋季,新酒的涩味消退,经过适度熟成后变得圆润柔和。在酒藏内外温度趋于一致的秋季,将酒从大桶移至小桶装瓶,这一工序便称为「冷卸」。熟成带来的醇厚与柔和口感,与秋季美食相得益彰。建议冷饮或微温热后享用。
