Ishikawamon rice, cultivated in the UNESCO World Agricultural Heritage-designated Oku-Noto region, is polished to 65% for this junmai from Sogen Sake Brewery. The brewery draws on mountain groundwater from behind the brewery and the Noto Toji tradition of maximizing rice umami. Soft and full-flavored with a clean finish, it suits everyday food pairing without fatigue.
