Description
Made from Yamada Nishiki rice polished to just 30 percent of its original size, this junmai ginjo hails from Aichi prefecture and is aged at cold temperatures before release. Expect a full bodied profile with notes of hazelnut, caramel, and toasted almond, layered over a base of steamed rice. Despite the deep polish that would typically qualify it as daiginjo, the sake retains its ginjo classification.
