Junmai Ginjo from Takane Nishiki rice at 55% polish, brewed at Yoyogiku Jozo in Joetsu, Niigata using ultra-soft Chibitagawa spring water and traditional fune pressing. The brewery pursues a fuller, more acid-forward style than typical Niigata tanrei sake, with rich rice umami that pairs well with grilled and fried dishes.
