Daiginjo brewed with Yamada Nishiki polished to 40% at Yoyogiku Jozo in Joetsu, Niigata, using ultra-soft Chibitagawa spring water from an elevation of approximately 250 meters. Traditional fune pressing produces a fresh aroma with a refined, food-friendly palate said to complement French cuisine.
