
Dai Shinshu Betsukakoi Junmai Ginjo Hiyaoroshi is an autumn-released, summer-aged Junmai Ginjo from Daishinshu Shuzo's special cellar aging program. Brewed in Nagano with self-cultivated yeast and Northern Alps snowmelt well water, the hiyaoroshi process of single pasteurization and summer maturation produces a smooth, harmonious character from this fully handcrafted brewery.
