秋田县
新政酒造坚持「仅使用秋田县产酒米、以纯米酿造」的方针,全程采用1930年分离的「协会六号酵母」及天然乳酸菌酿造,不添加任何酿造酒精。酒造还积极推行以杉板竹箍箍紧的「木桶」酿造,利用木桶天然材质中残留的微生物,发挥生命活动的酿造工艺。此外,酒造在秋田市东部山区开辟无农药、无化学肥料的酒米田,探索自然生态系统、农业与酿造之间的有机联系,持续追求清酒的本真风味。
