Mori no Kura was founded in 1898 in Kurume, Fukuoka, and in 2005 became Kyushu's first brewery to convert entirely to junmai sake, meaning every bottle contains only rice, koji, and water with no added alcohol. The brewery sources rice directly from contracted local farmers and draws soft underground water that rises naturally beneath the brewery, with a fourth-generation Mizuma toji guild master leading production.
