Shirataki Sake Brewery, founded in 1855 in Yuzawa, Niigata Prefecture — one of the snowiest regions on earth — built its philosophy around the ancient saying Jozenmizunogotoshi (the finest good is like water), making softness and purity the guiding principles of the brand. In 2011, the brewery converted its entire production to junmai sake, and today exports to over 30 countries, with Jozen Mizunogotoshi recognized internationally for its approachable, water-clear style.
