Hanamikura

Hanamikura is brewed by Hakusen Shuzo, a family-run brewery founded around 1850 in Kawabe, Gifu Prefecture, at the foot of Japan's southern Alps. The brewery's philosophy centers on exploring the full power of koji in sake production, crafting all key components in-house and taking pride in a meticulous aging process. One expression in the Hanamikura line uses a sakura yeast derived from somei-yoshino cherry blossoms, entrusted to the brewery with the condition that it be brewed and enjoyed locally.
