Furutaka is produced by Etajima Meijo, a brewery founded in 1908 on the island of Etajima in Hiroshima Bay, which served for decades as the home of the Imperial Japanese Navy Academy. The sake is brewed with soft spring water drawn from the slopes of Mount Furutaka, the mountain that gave both the brand and the peak their shared identity as symbols of the island. The brewery uses traditional koji-buta fermentation trays rather than mechanized methods, pursuing sake with clean rice umami and a crisp yet layered finish.
