Oyatakashi Shuzo, founded in 1830 in Aikawa, Kanagawa Prefecture, converted to an all-junmai brewery in 2008, committing every expression to pure-rice brewing with no added alcohol. The flagship brand Zarusohorai takes its name from the old local place name Kozaza Zarusou, the historical designation of the district where the brewery has stood for nearly two centuries, a quiet tribute to the land that shapes the sake. Drawing on Tanzawa mountain spring water and offering a range from speed-brewed junmai to shiro-koji fermentations and low-alcohol expressions, the brewery combines traditional rootedness with curiosity about contemporary styles.
