Yaegaki
Yaegaki traces its origins to 1666 in Harima, Hyogo Prefecture, with the sake name officially registered in 1881 and drawn from a joyful poem in the Kojiki and Nihon Shoki celebrating the wonders of life. The brewery builds its sake on three pillars: Yamada Nishiki grown in its home region, soft well water called Senju no Mizu drawn from the Hayashida River basin, and the cold-season brewing technique known as kanzukuri. The resulting sake is prized for its balance of richness and clean finish, making it a versatile companion to food.
