Fourth-generation toji Takafumi Sumikawa transformed the small regional brewery into one of the most sought-after producers in the world, drawing on the local water, rice, and people of Hagi in every brew. Toyobijin Junmai Daiginjo Itten was selected as a first-class sake on Japan Airlines, with its elegant white peach aroma drawing praise at international competitions.
