Toyobijin's Princess Michiko junmai daiginjo is brewed using a rose-derived yeast isolated through a Tokyo University of Agriculture project, with Yamada Nishiki and Saito no Shizuku rice at a 40% polishing ratio. The result is a sake with pronounced aromas of mango and banana, a refined sweetness on the palate, and a delicate, lingering finish.
