Description

The brand name Toyobijin, Asian Beauty, was given in honor of the founder's late wife, and the fourth-generation head Takafumi Sumikawa trained at the legendary Juyondai brewery before returning to Yamaguchi. The Jundo Ichizu, meaning single-minded devotion, series reaches back to sake's roots with Omachi: the oldest heirloom sake rice, ancestor to Yamada Nishiki, notoriously difficult to cultivate and rarely available in limited ginjo releases. Omachi delivers what smoother modern rices cannot: powerful, layered umami, vibrant acidity, and a deep savory complexity that makes this limited junmai ginjo genuinely age-worthy, with a seductively long, acidic finish.
