Ishikawa Brewery was founded in 1863 in Fussa City in western Tokyo, one of the capital's few remaining sake breweries, and the Tamajiman brand was established in the Showa period with the wish that the sake would become a source of pride for Tama, and bring satisfaction to many people's hearts. The brewery draws on underground water sourced 150 meters below its grounds and uses traditional cold-season brewing from autumn through early spring. The pure rice unfiltered expression earned the Tokyo National Tax Bureau Sake Evaluation Excellence Award in 2024 and the Wine Glass Delicious Sake Award highest gold in 2021.
