Founded in 1863 and situated along the Tama River, Ishikawa Shuzo uses the river's clean, soft groundwater to brew sake with delicate fruity aromas and an elegant, refined palate. The daiginjo grade requires rice polished to 50% or less and meticulous low-temperature fermentation.
