Tamanokei Junmai Daiginjo is a premium expression from Ishikawa Shuzo in Tokyo, presented under the Tamanokei label that emphasizes the brewery's connection to the Tama River heritage. This junmai daiginjo uses rice polished to 50% or less and relies entirely on rice, koji, and water for a sake of exceptional purity and refined complexity. The clean, soft groundwater unique to Fussa city in Tokyo produces a sake with silky texture and delicate floral aromas.
