Suzunoi is produced by Suzunoi Shuzoten, founded in 1811 in Tenei Village, Fukushima Prefecture, a mountain village with pronounced seasonal temperature swings and a long tradition of rice cultivation. The toji brewers at Suzunoi also farm the locally contracted sake rice variety Kamedori, blurring the line between grower and brewer in a deeply land-connected practice. Their signature Suzutsuki Shizukuzake is an unfiltered junmai ginjo made from Kamedori rice and the brewery's renowned soft mountain spring water, developed through slow cool aging.
