Sogen Sake Brewery was established in 1768 on the northern tip of the Noto Peninsula in Ishikawa Prefecture, and is recognized as the birthplace of the Noto Toji brewing tradition, one of Japan's four great regional brewer guilds. For over 250 years the brewery has specialized in ji-zake, crafting sake with a strong commitment to rich rice umami and a fruity, delicate ginjo character that has earned consistent recognition at national competitions. Sogen's position as the origin point of a celebrated brewing lineage gives its sake a historical weight that sets it apart within Noto's sake culture.
