Polished to 60% and stored unpasteurized before a single bottling heat treatment, this namachozoshu from Sogen Sake Brewery in Suzu, Ishikawa, retains the fresh, lively character associated with the namazake style. Sogen, the oldest brewery in the Oku-Noto peninsula with over 250 years of history, draws on local soft water for clean, dry results.
