Description

Milled to 65% and bottled without water addition, this honjozo genshu from Sogen Sake Brewery in Suzu, Ishikawa, formerly aged in the brewery's repurposed Noto Railway tunnel, benefits from the consistent year-round temperature of around 12ยฐC in that underground environment. The undiluted character delivers greater body and depth typical of tunnel-matured expressions from this historic Oku-Noto brewery.
