The name, meaning pine, bamboo, and plum, draws on classical East Asian symbolism for resilience and prosperity. Brewed with Sierra Nevada snowmelt and Sacramento Valley rice, and classified as junmai sake made without additives, all domestically produced Sho Chiku Bai is kosher, gluten-free, and sulfite-free.
