Sho Chiku Bai is the flagship brand of Takara Sake USA, Inc., established in 1983 in Berkeley, California, and by 1990 the largest sake producer in the United States. The name, meaning pine, bamboo, and plum, draws on classical East Asian symbolism for resilience and prosperity. Brewed with Sierra Nevada snowmelt and Sacramento Valley rice, and classified as junmai sake made without additives, all domestically produced Sho Chiku Bai is kosher, gluten-free, and sulfite-free.
