
Description
Kyo no Kagayaki rice polished to 60% and bottled as genshu at 17-18% alcohol gives this tokubetsu junmai its bold, extra-dry character, with a sake meter value of +16 placing it firmly in the cho-karakuchi (super dry) category. Winner of the Milano Sake Challenge 2019 gold award and subsequent gold awards at Singapore and Tokyo competitions, it is brewed with full fermentation to drive dryness while preserving the richness of undiluted sake. Fushimi's Shiragiku spring water supports both the firm, cutting finish and the underlying depth of flavor.
