Fumimoto Shuzo, the last remaining sake brewery in Shimanto Town, Kochi Prefecture, was founded in 1903 and currently produces Momotaro, a name chosen by public vote with the wish that the sake be beloved by young and old alike. While most Tosa sake follows a dry profile, Momotaro is deliberately brewed slightly sweeter, pursuing the ideal of a sake that drinks well warm and remains easy to enjoy with each visit. The brewery uses spring water from the Shimanto River system and sources its rice locally, including the Kochi Prefecture variety Gin no Yume, pressing the mash slowly through traditional fune (trough) pressing.
