Momotaro Junmai Daiginjo Nakadori is drawn from only the middle run of the press, capturing the purest fraction of fermented Gin no Yume rice at Fumimoto Shuzo in Kochi. The nakadori (middle cut) method eliminates the heavier, less refined beginning and end of the press for maximum elegance.
